Outside the Box Dinner

I made Skillet Chicken in a Thyme Red Wine Sauce from Pioneer Woman the other night. And as I was chopping and mincing and sautéing away, I was smiling to myself, not only because I was about to serve my 2 year old wine sauce but because I was pretty proud of myself for using ingredients such as fresh thyme, artichoke hearts, and mushrooms in our dinner.

This was an outside of the box recipe for us. It was delicious!!! 

Besides the mushrooms, Bogie scarfed it down and Monkey wasn’t too far behind.
As I become more and more comfortable in the kitchen and research more about healthy eating habits it seems like taking the leaves off of fresh thyme and using seven vegetables in dinner is the sensible thing to do. Of course I followed it up with a snack size Almond Snickers, but the boys ate Pumpkin Muffins for dessert. Which count as another serving of vegetable, right?

And we may have cereal for dinner tomorrow or maybe even hamburgers and fries because it will be Friday night and I’m not cooking then. But after that we need to get back on track.

Looks delish and good to know it's kid friendly too. Will have to give this one a try. Two of our favorite healthy dinners - lasagna soup and teriyaki meatball soup (filled with lots of veggies!).

Wow! Looks great! I love that your kids ate it, train them young!!! Our favorite healthy dinner is flattened chicken cooked in a little coconut oil with a handful of organic mixed greens and some avocado on the side. Top it off with a squeeze of lemon, salt, pepper and olive oil and yum!!!!!

Oh yum. You had me at artichokes, and mushrooms, and wine sauce!

I've recently been stepping out of my box in the kitchen too. My Mom just bought me a meat thermometer, and I can't wait to use it. I've always been intimidated by cooking anything that I have to use a thermometer with. Not anymore!

I love making regular pasta with red sauce. I put turkey italian sausage in my sauce. My family has no idea, it tastes great and the sausage texture is the same as pork sausage.

All of my kids adore stir fry...with chicken or if I'm feeling extravagant, shrimp. The basic recipe is on the Uncle Ben's brown rice box. Super easy, fast and nummy. Good for you for cooking out of the box..it can be fun!

Wow, that sounds amazing. Isn't it amazing what kids will actually eat, given the opportunity?

We love butternut squash pesto pizza around here. I know, it sounds bizarre, but man, it's good!

Yum!!! where was the invite??? By the way, Pumpkin is a fruit, not vegetable. Teee Heeeee. Just learned that at the pumpkin Patch! Pork Chops and Apples are one of my kids favorites, but it only has the one fruit, and NO vegitables......hm.........

yum! i need that recipe! we try to do the healthy dinners too! our fav is grilled chicken with cheese and spinach! but i could use more ideas! and friday nights around here is pizza and movie night! fun! xo

Hey I thought I already commented on this, but I don't see it!
That recipe looks DELICIOUS! I think I may need it because the boys in my house don't touch veggies and we need some tasty recipes around here that include veggies. When I gut them up small enough they'll eat them because as Jeff says "It's too much work to pick them out."
I LOVE to cook and bake, and would do it all of the time if there were more time in the day and if I wouldn't gain weight in the process. Ha!

LOVE PW recipes... almost always no fail!! ;) I always use red wine with red meat dishes.... that and fresh herbs make a delish meal!! Must try this one!! what pumpkin muffin recipe did you use??? Do share!! =)

That looks so yummy! I will have to try that one. PW is awesome! I got her cookbook and I LOVE it! My step kids would NEVER eat this, but my 16 month old would devour it. ;)
